Ribs
Directions
Preheat the oven (or grill with indirect heat) to 350°F.
Remove the membrane from the ribs if necessary.
Generously apply the rub to the ribs on all sides.
Tightly wrap the ribs in aluminum foil, sealing completely to prevent leaks.
Cook the ribs for 2:30 - 3:00, flipping halfway through. The ribs should be very tender.
Unwrap the ribs and allow them to cool. Meanwhile, make the barbecue sauce. Optionally, add about 1/4 cup of the meat juices to the sauce while simmering.
Heat a grill on high heat.
Baste one side of the ribs with the barbecue sauce. Place on the grill sauce-side down, then baste the other side.
Cook the ribs until the sauce becomes sticky and grill marks have formed, then flip.
Repeat basting and flipping up to a total of 4 times.
Remove the ribs from the grill and allow to cool.

Ingredients
1 cup ketchup
1 cup dark brown sugar
3 Tbsp butter
1 Tbsp hot sauce
1 Tbsp Worcestershire sauce
1/4 onion, grated
1 Tbsp dry rub
1 Tbsp black pepper, freshly ground
1/2 Tbsp garlic powder
1/2 Tbsp Sichuan chili flakes
1/2 Tbsp Dijon mustard
1/2 tsp liquid smoke
1/2 cup water
Juice of half a lemon
Directions
Add all the ingredients to a saucepan. Simmer on medium-low heat until thickened, about 30-45 minutes.
Pork Rub
Ingredients
1/2 cup dark brown sugar
1/2 cup white sugar
1/2 cup paprika
1 Tbsp smoked paprika
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp dried oregano
1 Tbsp kosher salt
1 Tbsp black pepper, freshly ground
1/2 Tbsp instant espresso powder

Mix the ingredients together.
