Components

Ingredients

  • 2 Racks Pork Ribs

Directions

  • Preheat the oven (or grill with indirect heat) to 350°F.

  • Remove the membrane from the ribs if necessary.

  • Generously apply the rub to the ribs on all sides.

  • Tightly wrap the ribs in aluminum foil, sealing completely to prevent leaks.

  • Cook the ribs for 2:30 - 3:00, flipping halfway through. The ribs should be very tender.

  • Unwrap the ribs and allow them to cool. Meanwhile, make the barbecue sauce. Optionally, add about 1/4 cup of the meat juices to the sauce while simmering.

  • Heat a grill on high heat.

  • Baste one side of the ribs with the barbecue sauce. Place on the grill sauce-side down, then baste the other side.

  • Cook the ribs until the sauce becomes sticky and grill marks have formed, then flip.

  • Repeat basting and flipping up to a total of 4 times.

  • Remove the ribs from the grill and allow to cool.

Barbecue Sauce

Ingredients

  • 1 cup ketchup

  • 1 cup dark brown sugar

  • 3 Tbsp butter

  • 1 Tbsp hot sauce

  • 1 Tbsp Worcestershire sauce

  • 1/4 onion, grated

  • 1 Tbsp dry rub

  • 1 Tbsp black pepper, freshly ground

  • 1/2 Tbsp garlic powder

  • 1/2 Tbsp Sichuan chili flakes

  • 1/2 Tbsp Dijon mustard

  • 1/2 tsp liquid smoke

  • 1/2 cup water

  • Juice of half a lemon

Directions

  • Add all the ingredients to a saucepan. Simmer on medium-low heat until thickened, about 30-45 minutes.

Pork Rub

Ingredients

  • 1/2 cup dark brown sugar

  • 1/2 cup white sugar

  • 1/2 cup paprika

  • 1 Tbsp smoked paprika

  • 1 Tbsp garlic powder

  • 1 Tbsp onion powder

  • 1 Tbsp dried oregano

  • 1 Tbsp kosher salt

  • 1 Tbsp black pepper, freshly ground

  • 1/2 Tbsp instant espresso powder

Directions

  • Mix the ingredients together.
