Banana Bread
Yields:
1 loaf
Ingredients
3 Bananas, overripe
1/2 cup Brown sugar
1/4 cup Canola oil
1/4 cup Milk
1 tsp Vanilla extract
1 tsp Cinnamon
1/2 tsp Nutmeg
1 1/2 cups All-purpose flour
1 1/2 tsp Baking powder
1/2 tsp Baking soda
Salt
1 Banana, ripe (optional)
Chocolate chips (optional)
Walnuts (optional)
Directions
Preheat oven to 350° F
Chop bananas into large bowl, add sugar, and mash thoroughly.
Mix in oil, milk, vanilla, cinnamon, and nutmeg.
Sieve flour, baking powder, baking soda, and salt on top of mixture. Fold together.
(Optional) Add chocolate chips and walnuts.
Pour batter into greased loaf pan.
(Optional) Thinly slice the ripe banana and arrange into two rows of shingles on top of the loaf.
Bake for 30-40 minutes or until done. Allow to cool before serving.
